Străbun Chardonnay 2025 is a dry Chardonnay built to express the Horia terroir more than technology. The grapes are hand-picked at dawn and vinified with a short maceration and gentle pressing, in a reductive regime, to preserve the clarity of the aromas. A slow stainless-steel fermentation, taken fully dry, and roughly three months on fine lees with weekly bâtonnage give the wine volume and a silky texture with no oak. The profile is built on green apple, pear and citrus, with a mineral touch and very fine notes of raw hazelnut and toasted bread. It is a clean, fresh and precise white — a stainless Chardonnay that lets the Dobrogea terroir speak.
