Low-temperature fermentation preserves its freshness, while stopping fermentation at a residual sugar level suited to the off-dry style brings a pleasing sense of roundness. The acidity remains present, balancing the perceptible sweetness. An effortlessly drinkable off-dry rosé, ideal for relaxed evenings, cold platters, or lightly spiced dishes.
